- 1 kg snake beans trimmed
- 1 cup trimmed snow peas
- 12 oven roasted tomatoes (you can buy these from your local deli, or you can do them yourself…simply cut roma tomatoes in half, place on baking tray, drizzle with olive oil, salt, pepper and fresh thyme and allow to dry in slow oven for about 2 hours)
- cup black olives
- 1 spanish onion sliced thinly
- 6 slices of haloumi cheese
- 1/2cup chopped dill
- cup chopped flat-leaf parsley
- 1/3 cup balsamic vinegar
- 1 cup extra virgin olive oil
Blanch green vegetables in boiling salted water and refresh in cold water. Grill slices of haloumi on char-grill plate, in a pan, or under the broiler, until golden brown. Halve roasted tomatoes. Toss all ingredients (except oil and vinegar) together in a large bowl. Mix vinegar and oil together in a glass jar and shake well. Pour over ingredients in bowl and combine. Transfer to serving dish.
