Cinnamon French Toast with Maple Syrup and Crispy Bacon

(serves 4 – 6)

Place bacon under griller and grill until crisp. Keep warm. Beat egg yolks, egg white, cream, cinnamon and brown sugar. Melt butter in a non stick fry-pan until bubbly. Dip slices of bread in egg mixture and slice into butter. Add more butter for subsequent slices if you run out. Repeat process with all slices of bread.

To serve place 2 slices of French Toast per plate. Drizzle generously with maple syrup and place crispy bacon slices in a criss cross on the top.
